One of my all time Thanksgiving favorites, as well as my families, is a sweet potato casserole. I have had many sweet potatoes casseroles in my day and this is far and above the best I have ever tasted. I have never been to fond of canned sweet potatoes thrown in a casserole dish with marshmallows slightly burned on top. Thanks, but no thanks! So this Thanksgiving I will prepare my favorite sweet potato casserole. I am telling you, this one is a keeper.
- 2 eggs
- 1 cup sugar
- 6 tablespoons butter, softened
- 1 teaspoon vanilla
- 1/2 cup milk
- 3 cups cooked and mashed sweet potatoes
- Topping
- 1 cup brown sugar
- 2 tablespoons butter
- 1/3 cup flour
- 1 cup chopped pecans
- Beat eggs, add sugar, butter, vanilla, milk, and sweet potatoes. Pour into 1-quart casserole dish.
- Topping:
- Mix brown sugar, butter, and flour until it looks like cornmeal. Spread on the potatoes. Cover with pecans and pat down with hand.
- Bake at 350 degrees.
