Margarita Popsicles you say? With alcohol and they freeze? Yes, they do and all that try them will love them. Because the alcohol level is low in volume compared to the other liquids used, these will freeze if you use the exact proportions.  These little shots of heaven are refreshing on a hot afternoon after a spicy dinner or a Mexican feast.  Just a little something special for the adults compliments of shared recipes via Facebook.

On the Menu Monday: Margarita Popsicles!
Serves: 10
Ingredients
  • 1 1/4 c. fresh lime juice
  • 1 (14 oz.) can of sweetened condensed milk
  • 1 c. water
  • 1/4 c. tequila
  • 2 Tbsp. orange juice
  • 10 sliced lime rings
  • Kosher salt
  • You will also need:
  • 10 (3 oz) Dixie or Solo cups
  • Popsicle sticks
Instructions
  1. In a blender combine lime juice, sweetened condensed milk, water, tequila and orange juice.
  2. Blend until throughly combined and pour liquid evenly into cups.
  3. Dip lime rings into salt, coating one side, then run popsicle stick through center of lime ring so that you can place in center of cup with salted side of lime facing up.
  4. Freeze 8 hrs or overnight.
  5. Popsicles will easily pull out of cups when ready to enjoy.

About Kristi

Kristi Leeper is a lifelong lover of all things creative and crafty. She likes to touch things, dissect them, figure them out and maybe even reproduce them. Growing up in San Angelo, Texas she was exposed to small town values, but the world was always whispering in her ear to come out and play. Life has led her down a myriad of career paths such as a baker, licensed manicurist, florist, and a high school history teacher. The simple truth is she is good at all of these occupations and being good at a lot of things has served her well in life. She currently works as part-time as the Special Projects Manager for the Museum of the Southwest and for her husband keeping the books straight for the company he owns because he is simply a good boss and let’s her go to yoga whenever she wants.
